<p><b>DIABETIC</b> BEEF PASTIES</p>
<p>&#8211;Crust-<br />   3/4 tsp. Salt<br />   1/4 c. plus <br />   2 tsp. vegetable shortening<br />   1 egg <br />   Water </p>
<p>Put flour and salt in mixing bowl. Cut in shortening. Beat egg in a measuring cup. Add water to make 1/2 cup, add to flour and mix until well moistened. Divide dough into 6 balls. On lightly floured board, roll balls into circles between waxed paper. Then set aside.<br />   &#8211;FILLING&#8211;<br />   3/4 lb. coarsely ground beef (raw)<br />   2 c. diced raw potato<br />   3/4 c. diced raw carrot<br />   3/4 c. diced celery<br />   1 tsp. salt<br />   1/4 tsp. black pepper<br />   2 tbsp. water</p>
<p>Once all filling ingredients have been well mixed. Spoon on to dough, and wrap around beef. Bake at 350 degrees for about 10 &#8211; 15 min or until dough has become golden brown.</p>

<p>TORTE AU CHOCOLA</p>
<p>1 3/4 c. cake flour, sifted<br />   1/43 tsp. salt<br />   3 tsp. baking powder<br />   1/2 tsp. cinnamon<br />   4 eggs, separated<br />   1/2 c. melted butter or oil<br />   3/4 c. Fruit Sweet <br />   3/4 c. Fudge Sweet<br />   1 tsp. vanilla<br />   1/2 c. milk</p>
<p>Sift dry ingredients together and set aside. Combine the butter or oil, Fruit Sweet, Fudge Sweet and vanilla. Add the yolks to the liquid mixture, blending one at a time. Add the flour mixture to the liquid mixture alternately with the milk. Whip the egg whites to stiff peaks and fold in gently but thoroughly. Bake at 350 degrees for 1/2 hour in 2 (9&quot;) round greased and floured tins. Test. Cake will spring back when lightly touched. For a drier cake, bake until the cake draws away from the edge of the pan. Cool. <br />   &#8211;FILLING&#8211;</p>
<p>1 (8 oz.) pkg. cream cheese<br />   3 tbsp. Fruit Sweet<br />   1 tsp. vanilla</p>
<p>Blend together. Cream cheese may be warmed slightly to soften for blending. Fill cake, then frost with whipped cream sweetened to taste with Fruit Sweet, flavored with vanilla or your favorite flavoring. Drizzle melted Fruit Sweet around edge of cake. *optional &#8211; put thinly sliced strawberries on top. </p>

<p>1 c. rice, uncooked<br />   1 c. water<br />   1 c. orange juice <br />   1 tsp. reduced calorie margarine<br />   Dash of salt<br />   1 tbsp. orange rind, freshly grated<br />   1/2 c. fresh orange sections, seeded</p>
<p>In a 2-quart microwave safe casserole, combine the rice, water, orange juice, margarine and salt. Cover, microwave on High for 5 minutes. Stir in the orange rind. Turn the bowl 1/4 turn. Microwave on High for an additional 10 minutes, turning the bowl after 5 minutes. Do not uncover the bowl. Allow to set covered for an additional 10 minutes or until all of the liquids have been absorbed. Immediately before serving, fluff with a fork, add orange sections and mix gently. Serve with pride. Makes about 6 (100 calories) servings. </p>

<p>1/2 c. rice, uncooked (not instant)<br />   1 (20 oz.) crushed pineapple, in own juice<br />   1 (3 oz.) pkg. sugar-free fruit flavored gelatin<br />   Boiling water<br />   Pineapple juice, drained from can<br />   Maraschino cherries<br />   Heavy cream</p>
<p>Cook rice according to package directions. Drain, set aside. Drain pineapple, reserving 1 cup juice. Dissolve gelatin in 1 cup boiling water. Add juice. Stir in well drained rice, the cooked rice will absorb the color and flavor of the gelatin. Mix well and chill until thickened but not quite set. Add drained pineapple and cherries, if desired. Fold in cream that has been whipped. Chill. Makes about 8 servings. </p>

<p>TACOS</p>
<p>5 oz. raw ground veal (can also use lean beef)<br />   1 tsp. chili powder<br />   1 tsp. dehydrated onion<br />   1/4 tsp. salt<br />   1/4 tsp. onion powder<br />   1/4 tsp. paprika<br />   Dash Red Hot sauce<br />   1 oz. bread (1 slice)<br />   1/2 c. shredded lettuce<br />   1 tbsp. pimento dressing<br />   1 (7 oz.) jar pimento, drained<br />   2 tbsp. vinegar<br />   2 tbsp. prepared mustard<br />   Artificial sweetener equal to 4 tsp. sugar</p>
<p>Brown meat in Pam sprayed skillet. Add seasonings and cook 5 minutes. Remove meat from skillet. Toast bread lightly. Spread meat mixture over 1/2 of the slice. Fold and hold in place with toothpick. Combine lettuce and pimento dressing. Cover taco. Makes 1 serving. Pimento Dressing: Combine pimento, vinegar and mustard. Add sweetener. Blend until smooth. Store in refrigerator and use as desired. Makes 1 cup.</p>

Add to creamed mixture, mix at medium speed until smooth. Drop by tablespoon onto cookie sheet lined with foil. Press down lightly with fingers dipped in cold water to form circles 2-inches wide. Bake at 375 degrees for 10 to 12 minutes or until lightly browned.
